The Winemaking
This Chablis is produced from Chardonnay grapes grown on Kimmeridgian soils, rich in clay-limestone and Exogyra Virgula fossils. The planting density is 6500 vines per hectare, with an average vine age of 35 years. The winery adopts sustainable practices, ensuring an environmentally friendly approach. Harvesting is done mechanically, followed by careful selection of the grapes. Vinification takes place in temperature-controlled stainless steel vats, with a long lees aging, giving the wine greater complexity and structure. Before bottling, the wine undergoes fining and tangential filtration. The bottles are then stored in a climate-controlled cellar at 15°C until shipment.

THE WINERY
Domaine des Quatre Saisons is a historic family-run winery located in Épineuil, about 20 km from Chablis, in the Burgundy region. Founded in the 1940s by Henri Detolle, the estate has evolved over generations, with Georges Detolle modernizing cultivation techniques in the 1970s. In 2003, Georges and Dominique Detolle combined their properties to form the current estate, which now spans 85 hectares.
The production at Domaine des Quatre Saisons includes a range of wines that express the richness of Burgundy’s terroirs. They offer red and rosé wines made from Pinot Noir grapes, and white wines from Chardonnay grapes, under the designations Petit-Chablis, Chablis, Chablis Premier Cru, and Bourgogne (Tonnerre and Épineuil). The vineyards are cultivated on Kimmeridgian soils, characterized by clay-limestone and Exogyra Virgula fossils, giving the wines a distinctive typicity.
