The Winemaking
The winemaking of Pinot Grigio Dessimis begins with de-stemming and cold skin maceration at 8 °C, essential to enhance the delicate varietal aromas. Clarification occurs in a static cold setting, followed by alcoholic fermentation at controlled temperatures between 16 and 19 °C, using selected yeasts. The fermentation lasts for a period of 20-22 days. Malolactic fermentation is not performed, preserving the wine’s freshness. The elevage takes place on natural lees for 9 months, with natural clarification before bottling and an 8-month bottle aging.
