Airali Blanc de Blanc Extra Brut Sparkling Wine from Tenuta Carretta Winery
The Airali Blanc de Blanc Extra Brut is a superior quality sparkling wine produced in Alta Langa, a mountainous region in the south of Piedmont that connects to the Ligurian Apennines. This area is renowned for its excellent winemaking tradition and is considered the cradle of Italian sparkling wine. Born from a research project initiated in 1990, the territory hosts vineyards of Pinot Noir and Chardonnay, cultivated to produce sparkling wines following the classic method.
The Winemaking
The name “Airali” comes from the hillside of the commune of Cissone (CN), where the vineyards are located at about 600 meters altitude. This wine is made exclusively from Chardonnay, chosen for its acidity, sapidity, and finesse, characteristics that result in a sensation of vertical flavor development. The grapes are harvested and placed whole in a pneumatic press. After removing the first-run juice, the subsequent must is fermented at a temperature of 18°C to create the base wine. The following March, after the harvest, the wine is bottled for the prise de mousse and aged for at least 30 months. At the time of disgorgement, the liqueur d’expédition is added to complete the process.
