The Winemaking
The winemaking process for this Chenin Blanc begins with harvesting the grapes in the early morning hours to ensure maximum freshness. The grapes are then destemmed and lightly crushed, followed by a brief skin contact before pressing. The must rests overnight in steel tanks, allowing for natural clarification. After this stage, selections of individual parcels are separated and inoculated with selected yeasts. Fermentation occurs at a controlled temperature between 12° and 14°C, while maturation in steel on fine lees imparts greater structure and elegance to the wine, enhancing the fresh and fruity characteristics of the grape.
Tasting the wine
Visually, the Chenin Blanc Signature presents a light straw yellow color, enriched by a delicate greenish hue. On the nose, it offers a bouquet of fresh fruity notes, with hints of green apple, citrus, and a floral touch.
