The Winemaking
Harvesting takes place in the early days of September. The winemaking of Chardonnay Vie Di Romans is a carefully crafted process designed to enhance the unique characteristics of the terroir. After destemming, the grapes undergo cold skin maceration at 8 °C, followed by static cold clarification. Fermentation occurs at controlled temperatures between 16 and 19 °C, using selected yeasts, and lasts 22-26 days. The wine does not undergo malolactic fermentation, thus preserving its freshness. The elevage extends over 9 months on natural lees, followed by 8 months of bottle aging.
