The wine Lupi Terrae by the Borgo Delle Oche winery
Lupi Terrae from the Borgo delle Oche winery is a blend of native Friulian grapes from the vineyards owned by the winery. The winery does not specify which grape varieties are used, but we know there is for sure some Verduzzo. We are located in Valvasone, in the Province of Pordenone, in the heart of the DOC Grave, another stunning wine production area in Friuli Venezia Giulia.
Borgo delle Oche believes the wine is done in the vineyard and, you have to be careful not to ruin it in the cellar; for this reason, the winery practices artisanal cultivation in the vineyard without the use of pesticides or chemical substances; once in the cellar, they rely on long fermentations and the cold.
The winemaking
The harvest is strictly manual, and the selected grapes are immediately brought to the cellar; winemaking, which takes place separately for each grape variety, begins with a gentle pressing after a few hours of maceration. The must is then moved to stainless steel tanks for fermentation at a controlled temperature of 15°C. The wine ages for at least six months in steel on fine lees; only the Verduzzo ferments and ages in French oak barrels. After blending and bottling, it rests for a few more months in the cellar before being released on the market.
Tasting the wine by Borgo Delle Oche
Deep straw-yellow, the aroma is intense, with pleasant notes of ripe fruit alternating with sweet scents of honey, giving way to fresh citrus sensations. This wine is well structured on the palate, with a beautiful mineral note with a good correspondence between aromas and flavour and excellent persistence.
Food Paring
Lupi Terrae is perfect with cured meats and cheeses, including sheep’s cheese; it pairs well with fish, even smoked. It is also worth trying with classic meat ragù pasta.
