At that time, the nobleman Andrea Damiano, owner of the estate, reserved these precious Podio grapes for himself, considering them superior. Today, these grapes continue to be cherished, combined with those from other vineyards located on mid-altitude hills characterized by sandy and calcareous soils enriched with gravel.
The Winemaking
The winemaking of Langhe Nebbiolo Podio follows a meticulous process that enhances the natural characteristics of the grapes. Fermentation occurs with maceration for 10-12 days at a controlled temperature of 28°C. Afterwards, the wine is aged in oak tonneaux for at least 6 months, a crucial step for developing its aromatic complexity. Following this period, the wine is transferred to steel containers and then bottled, where it continues to refine for an additional minimum of 6 months.
