Zero Infinito from the Pojer e Sandri winery represents excellence in the Italian organic wine scene. This sparkling white wine with sediment is a perfect example of sustainable and innovative winemaking, characterized by a complex and inviting aromatic profile. Produced in the enchanting lands of Alta Val di Cembra, Zero Infinito embodies the passion and expertise of Pojer e Sandri, founded in 1975.
Winemaking
The winemaking of Zero Infinito utilizes Solaris grapes, a resilient variety born in Freiburg, Germany. This vine is cultivated in the Maso Rella vineyard in Grumes, situated at an altitude of 800-900 meters above sea level, with a south-southwest exposure. The Guyot training system and a density of 6200 vines per hectare ensure a yield of 80-90 quintals per hectare. The volcanic-origin soil with disintegrated porphyry contributes to the wine’s unique characteristics. The winemaking process is entirely natural, without chemical intervention, adhering to a zero-impact philosophy both in the vineyard and in the winery.
Tasting the sparkling wine Zero Infinito
Zero Infinito presents itself with a brilliant straw-yellow color. On the nose, it offers a bouquet of slightly aromatic and floral scents, with notes of elderflower and mountain flowers. On the palate, it is a triumph of fruit, with perceptions of Golden apple, pear, apricot, and peach, enriched with fresh tropical notes. The taste is juicy, fragrant, and fresh, with a pleasant ability to quench thirst. The aromas perceived on the nose are mirrored in the mouth, creating a harmonious and engaging sensory experience. It is recommended to serve at a temperature of 8-10°C, decanted in a carafe or shaken for those who prefer a more rustic version.
Food Pairings
Zero Infinito is the ideal companion for appetizers based on cured meats, thanks to its freshness and liveliness that balance the rich and savory flavors of the meats. Perfect as an aperitif, this wine invites conviviality and sharing, making every occasion special. Its versatility also makes it suitable for accompanying light dishes and fresh salads.
With an alcohol content of 12% and an expected duration of 2-4 years, Zero Infinito is a wine that not only satisfies the palate but tells a story of dedication and winemaking innovation. The label, created by the Trentino artist Rolando Trenti, reflects the identity and distinctive character of this unique wine.
THE WINERY
