Filara is a prestigious white wine produced by the winery La Casa dei Cini, located in the picturesque area of Borgonovo in Umbria. This winery, operating under the principles of organic farming, boasts an environmentally respectful production, with vineyards stretching over gentle hills at 330 meters above sea level. The Filara vineyard is cultivated on sandy-loam soils, with an East-West exposure that optimizes sunlight capture, essential for grape ripening.
The Winemaking
Made from a blend of 70% Grechetto G5 and 30% Manzoni Bianco. The vines are fully grassed and managed following organic methods. Harvesting is done manually in the first decade of September, with grapes collected in crates to preserve quality. After gentle destemming, the grapes are pressed with a horizontal disk press. Fermentation occurs in steel, without maceration, and aging continues in steel for 6-8 months.
Tasting the wine Filara
This wine presents a bright straw-yellow color and offers a complex aromatic bouquet of white-fleshed fruit, wildflowers, and light mineral notes on the nose. On the palate, the wine is fresh and savory, with a balanced structure and pleasant persistence. The absence of fining and filtering keeps the purity of its natural aromas intact.
Food Pairings
Filara lends itself to numerous culinary pairings due to its versatility and freshness. It is ideal with fish dishes, such as carpaccio and tartare, but also pairs well with light pasta dishes and summer salads. THE WINERY
La Casa dei Cini was founded in 2005 thanks to the enthusiasm of Clelia and Riccardo Cini, both graduates in Agricultural and Environmental Sciences and in Viticulture and Enology. Located among the hills of Valnestore, the company is proudly organic and multifunctional, focused on cultivation and diversification of the land, with a strong commitment to soil preservation.
History
The Cini family has lived at Vocabolo Petroso since the late 1700s. Their ancestors were millers and blacksmiths, cultivating vines, olives, and cereals, and raising livestock. Grandfather Bonaventura produced oil and wine that he sold in nearby towns. In the 1970s, Aristide Cini expanded the business and introduced mechanization, along with his wife Adriana Fratini. The new estates were transformed into vineyards and olive groves, taking advantage of the favorable land exposure.
