The Winemaking

Fermentation occurs in stainless steel tanks using only indigenous yeasts. No chemical or physical interventions are made during fermentation, and sulfur dioxide is added only in small amounts at the time of bottling. The wine matures in steel for one year and undergoes bottle aging for a few months, ensuring unique complexity and depth of flavor.

Cilet presents itself in the glass with a bright straw-yellow color. On the nose, it offers a fragrant bouquet of lily of the valley and floral notes that evoke summer. Only indigenous yeasts are used, excluding selected ones. Sulfur dioxide is added only in small quantities at the time of bottling.
Production is limited, allowing for rigorous quality control and particular attention to every detail. For instance, the Cilet wine has a limited production of only 3300 bottles, ensuring an exclusive experience for enthusiasts.
