The Sauvignon Vieris from Vie Di Romans winery is named after the “Vieris” vineyard, located in the prestigious Friuli Isonzo Rive Alte area. This name was chosen to celebrate the unique terroir that characterizes this vineyard, situated in the municipality of Mariano del Friuli. The vineyards have an average age of 24 years and are densely planted with 6,000-6,500 vines per hectare. The particular soil composition, rich in skeletal structure and reddish sandy loam, contributes to giving the wine a distinctive organoleptic profile, enhancing the quality of the Sauvignon Blanc grapes, predominantly French clones.

The Winemaking
The winemaking of Sauvignon Vieris begins with de-stemming and cold skin maceration at 8 °C, to enhance the varietal aromas. Clarification occurs in a static cold setting, followed by alcoholic fermentation at controlled temperatures between 16 and 19 °C, using selected yeasts. The fermentation lasts between 14 and 18 days, without performing malolactic fermentation, thus preserving the wine’s freshness and vibrancy. The elevage takes place on natural lees for 9 months, with natural clarification before bottling and an 8-month bottle aging.
