The Sauvignon Ronco del Cerò from Cantina Venica & Venica encapsulates the history and soul of the Dolegna del Collio region. On February 6, 1930, Daniele Venica purchased the Cerò farmhouse, marking the beginning of a winemaking tradition that now spans four generations. This wine symbolizes the roots of the Venica family and their dedication to the land and quality. Located within the DOC Collio, the vineyards of Ronco del Cerò boast a variety of exposures that enrich the wine’s aromatic profile, making it a perfect example of how Sauvignon has adapted to the Friulian territory.
Serve it chilled, around 12/13°C, to enhance its aromatic notes; with over 10 years of aging potential, this wine is set to improve and surprise over time.
The Winemaking
Sauvignon grapes are harvested and destemmed between the second and third week of September. After harvesting, they undergo maceration for about 18 hours at 10/12°C in oxygen-protected containers using innovative systems that recycle fermentation carbon dioxide, thus minimizing the use of antioxidants. About 10% of the wine matures on the lees in large wooden barrels of 20/27 HL, while the rest ages in steel containers. Bottling occurs during the full moons of March and July.

Sauvignon Ronco del Cerò presents itself with captivating green hues that gradually transform into a bright straw yellow. On the nose, it offers a complex bouquet due to the different vineyard exposures: warm, fruity notes of yellow peach and melon blend with elegant vegetal aromas like elderflower. On the palate, the wine confirms its elegance with a fresh, savory sip enriched by floral and fruity hints. It has a consistent structure with good taste-olfactory persistence.

This wine pairs perfectly with dishes such as vegetable candies, grilled prawns with lime, fried zucchini flowers, baked scallops, and tagliolini with salmon and aromatic herbs.
