The wine Zinfandel Diamond by Francis Ford Coppola winery
The Zinfandel, Diamond Collection Red Label of the Francis Ford Coppola winery is a bland of Zinfander grapes for 79% and Petit Sirah grapes for 21%, both grown in the vineyards owned by the Coppola family. The majority of the grapes come from the Hog’s Canyon vineyard in Paso Robles; here the clusters are bigger and more concentrate in flower; a small part comes from the Amador County vineyard; here there are the winery’s oldest vines.
The Winemaking
The harvest is manual and only the selected grapes are brought to the cellar for winemaking. Fermentation takes place in steel. The wine then ages in French and American oak barrels for about 12 months. After bottling, the wine rests for a few months in the cellar before being placed on the market.
Tasting the wine
Garnet red with violet reflections. The aroma is elegant with pleasant fruity notes of blackberries and strawberries that alternate well with hints of toasting to close with pleasant scents of cloves. Full-bodied and well structured on the palate with a good correspondence between aromas and flavor. Persistence is also good.
Food Pairing
Ideal with white meats and medium-hard cheeses. Must try with roast chicken.
