The Vitovska Kamen from Zidarich is an emblematic wine, a work of art rooted in the millenary tradition of the Karst region. This wine takes shape in a unique context, where local marble is transformed into vinification vessels, contributing to a sensory experience that unites land and history.
The name Kamen means stone, and indeed, Benjamino decided to embark on a new challenge by vinifying in Karst stone vats. Local stone craftsmen, brothers Marko and Kristian Zidarič, crafted the stone barrel that officially became part of the Zidarich winery.
The Winemaking
The winemaking of Vitovska Kamen begins with the harvesting of grapes, which grow on soil rich in red earth derived from the disintegration of marble. In the winery, the grapes are destemmed, and alcoholic fermentation occurs spontaneously within the stone vat, a choice that provides the wine with a constant temperature. Maceration takes place over 18 days, allowing the must to remain in contact with the skins. Subsequently, the wine is transferred to large oak barrels where it ages for 22 months, without any filtration, thus preserving its authenticity and intimate connection with the territory.
Tasting the wine
Visually, Vitovska Kamen presents itself with an elegant, antique golden yellow color, enriched with coppery hues. On the nose, it offers a complex bouquet with hints of broom, iodine, white-fleshed fruit, medicinal herbs, and pronounced minerality. On the palate, the wine reveals its Karst essence, with a well-balanced sapidity, sharp freshness, and an enveloping tannic presence. The broad body is delineated by a citrusy minerality that imparts depth and persistence.
Food Pairings
It pairs splendidly with dishes based on fish, seafood, and white meats. It is also ideal with fresh cheeses and vegetarian dishes, particularly those featuring grilled vegetables and aromatic herbs. This wine, therefore, is not just to be drunk, but to be savored by the glassful, celebrating its complexity and connection to its territory.
