The sparkling wine Flaminivs from Valpanera Winery
The Flaminivs Metodo Classico Brut from Valpanera Winery is a high-quality sparkling wine, crafted with artisanal care and traditional methods. This sparkling wine embodies the elegance and complexity of the Cortona di Fiumicello terroir, a historic area characterized by soils rich in active limestone, silt, sand, and gravel.
The Winemaking
The production of Flaminivs follows the rigorous classic method. The grapes, 100% Chardonnay, are harvested in the first half of August to preserve the fruit’s freshness and liveliness. The primary fermentation takes place in stainless steel tanks, where the wine gains complex aromas through a long aging on the lees. Subsequently, in the first weeks of March, the wine is bottled for a 30-month tirage. This extended period on the lees gives the wine its characteristic fine mousse and constant perlage. After disgorgement, the wine undergoes a further 6-month aging before being released to the market.
Tasting the wine by Valpanera
Flaminivs Metodo Classico Brut presents a beautiful yellow color with amber notes, resulting from its maturation on the lees. On the nose, it offers a fruity bouquet with fine and intense aromas, accompanied by delicate notes of bread crust. On the palate, the wine is lively and full, with notable persistence that culminates in a pleasant almond finish. It is a wine that attracts not only for its aromatic complexity but also for its balanced structure and its ability to improve over time when properly stored.

This sparkling wine lends itself to multiple culinary pairings. It is ideal as an aperitif but also pairs perfectly with fish dishes, shellfish, and seafood. Its liveliness and acidity make it an excellent companion for Asian cuisine and dishes based on white meats.
