The wine Castelcerino Soave Classico by Rocca Sveva
The Castelcerino Soave Classico of the Rocca Sveva winery is 100% Garganega grapes grown on the hills east of Verona in Veneto; in this area, you can find the most important regional DOC and DOCG, well-known at the worldwide level. In particular, the FAO (Food and Agriculture Organization of the United Nations) has recognized the vineyards of Soave as the first historical rural landscape in Italy, an agricultural heritage of global importance.
This Soave wine takes its name “Castelcerino” from the vineyard it comes from, whose calcareous soils, rich in clay, allow for the production of a fresh and harmonious, intense and well-structured wine.
Rocca Sveva is a charming medieval village transformed into a winery of excellence. The Soave Classico is part of a wine selection from the Veronese tradition.
THE WINEMAKING
The harvest is strictly manual and only the selected grapes go to the cellar for winemaking that begins with a soft pressing; the must settles statically and the fermentation takes place in steel tanks. The wine refines in steel for at least six months and, after the assembly and bottling, it rests for a few more months in the cellar before being released on the market.
Tasting the wine from Rocca Sveva
Straw yellow with golden hues; the aroma is fragrant with pleasant fruity hints where peach prevails, ripe apple followed by notes of acacia flowers and puffs of sage. Elegant and fresh on the palate, this Castelcerino Soave Classico is a pleasantly fresh wine with a good correspondence between aromas and flavour and a bitter almond finish typical of this grape variety.
