The Winemaking
The winemaking of Schioppettino is carried out using indigenous yeasts, thus preserving the native character of the grape variety. The grapes, grown on sandstone marl soils known as “Ponka” at an altitude of 100 meters above sea level, are manually harvested into crates. The planting density is about 3500 vines per hectare with a yield of 60 quintals per hectare, and the training system is Guyot. After skin maceration with alternating pump-overs and délestages, the wine ages for 24 months in wooden barrels and an additional 12 months in the bottle. The alcohol content varies between 13% and 14%, and the wine is produced with respect for the environment and the territory.
Tasting the Winery’s Wine
On the nose, the Schioppettino is full and persistent, with seductive hints of forest fruits, cyclamen, and an incredible black pepper note, typical of the grape variety. On the palate, the wine fulfills its olfactory promises, releasing the fruit pulp and unfolding with soft elegance and intensity. The intense red color of the wine foreshadows a rich and complex tasting experience that does not disappoint expectations.
Food Pairings
The Schioppettino from Vigna Petrussa winery is an extremely versatile wine, ideal for accompanying a wide range of dishes. Among European foods, it pairs perfectly with mushroom veloutés, fermented cheeses, roasted meats, and game. Concerning international dishes, it pairs well with dishes such as chicken tikka masala, Singapore rice noodles, and sweet and sour dishes. The recommended serving temperature is between 18° and 20°C to best enhance all its organoleptic qualities.
