The Friulano Ronco delle Cime from Venica & Venica Winery
The Friulano Ronco delle Cime from Cantina Venica & Venica embodies the essence of Collio and the Friulian winemaking tradition. This Cru wine is part of the “Spirit of the Place” project, celebrating the territory and its stories tied to the Venica family. The name “Ronco delle Cime” comes from the vineyard’s toponym, located on the Cime hill, the highest point of the estate. This vineyard, at an altitude of about 270 meters above sea level, benefits from a unique microclimate thanks to the cool summer breeze of the “borin,” which protects and gently caresses the Tocai Friulano vines.
The Friulano Ronco delle Cime has an aging potential of over 10 years, during which it will continue to evolve, offering new aromatic nuances and increasing complexity. This wine represents an excellence of Cantina Venica & Venica, a testament to their dedication and passion for the territory.
The Winemaking
The Friulano grapes are harvested and destemmed in the second decade of September. After harvesting, the grapes undergo maceration for about 18 hours at a temperature of 11/12°C in special containers, protected from oxygen by innovative systems that recycle fermentation carbon dioxide, thus reducing the use of antioxidants. About 40% of the wine is aged in large wooden barrels of 20/27 HL, while the remainder is aged in steel containers. The wine is assembled and bottled during the full moons of April and July.
Tasting the wine of the winery
The Friulano Ronco delle Cime presents a bright golden yellow color. On the nose, it releases intense aromas of William pear, yellow peach, delicate herbs, and wildflowers, culminating in a slight hint of almond. On the palate, it offers a great structure: warm and harmonious, with a pleasant sapidity and freshness. It is a full-bodied, enveloping wine with intense fruity notes and an almond finish typical of Friulano.
Food Pairings
This wine pairs beautifully with both seafood and land dishes. It is perfect with shrimp risotto scented with orange, leek and wild garlic velouté, aged prosciutto, cow and goat milk cheeses, fried eggs with truffle shavings, tagliolini with tomato and swordfish, and porcini mushroom risotto with parsley. The ideal serving temperature is between 12 and 13°C.
