The Merlot from Venica & Venica Winery

The Winemaking
The Merlot grapes were harvested and destemmed after mid-September. Once in the winery, the grapes were macerated for about 10 days, a process that allows for optimal extraction of the grape’s aromas and tannins. Subsequently, the wine was aged for several months, enhancing the typical elegance and complexity of Merlot. Bottling takes place in July following the harvest.
Tasting the wine of the winery
The Merlot presents a fairly intense ruby red color. On the nose, the wine is young, fruity, and slightly herbaceous, with a harmonious bouquet that embraces notes of berries such as blueberries and blackcurrants, violets, plums, cherries, along with hints of tomato leaf, fennel, and rhubarb. Herbal notes like mint and thyme are also perceived, with a subtle balsamic note reminiscent of pine. On the palate, the wine is broad and deep, medium-bodied, with juicy richness of blackberries and cherries. The tannins are light and velvety, perfectly balancing with underbrush notes in a soft and enveloping sip. The acidity is generally low.
Food Pairings
Thanks to its body and elegance, Merlot pairs beautifully with mixed platters of cold cuts and cheeses, vinegar salami, brovada and muset, red meats, roasts, poultry, and aged cheeses. The ideal serving temperature is between 18 and 20°C.
