Vitovska from Cantina Zidarich is a white wine that embodies the soul of the Carso, a unique region near Trieste. This wine is made from a rare autochthonous grape variety, resulting from a cross between Malvasia Bianca Lunga and Glera, which has perfectly adapted to the challenging climatic and geological conditions of the area. Benianino Zidarich’s commitment to cultivating these vineyards, combined with an artisanal production philosophy, gives Vitovska a distinctive and authentic character.
The Winemaking
The production of Vitovska begins with the manual harvesting of the grapes, which are then destemmed and undergo spontaneous fermentation with indigenous yeasts. The maceration on the skins takes place in open vats, during which daily punch-downs are performed. This process, without temperature control, allows for the extraction of aromatic compounds and tannins. After fermentation, the wine undergoes malolactic fermentation in large oak barrels, aging for about 24 months in various-sized barrels before being bottled without filtration or stabilization.
Tasting the wine
n the glass, Vitovska displays an intense golden-yellow color. On the nose, it offers a complex bouquet of wildflowers, ripe fruit, aromatic herbs, and iodized notes that evoke its connection to the sea. On the palate, the wine is fresh, full-bodied, and savory, characterized by a persistence that invites another sip. Sensations of mandarin peel, clove, and loquat intertwine with delicate mineral and smoky notes, creating a balanced and captivating tasting experience.
