The wine Ramandolo by Filippon winery
The Ramandolo from Cantina Filippon is a unique passito wine, renowned for its balance between sweetness and structure. This wine is made exclusively from yellow Verduzzo grapes, grown in the small hamlet of Ramandolo, in the municipality of Nimis, located in the Colli Orientali del Friuli. With a production limited to about 150,000 bottles a year, it is a true rarity in the Italian wine landscape. Cantina Filippon employs a special approach, waiting for the noble rot to form on the grapes before harvesting, which often occurs in November. This process gives the wine a distinctive character, capable of captivating even the most discerning palates.
The Winemaking
The winemaking process of Ramandolo from Cantina Filippon is an art that requires time and attention. Once harvested, the grapes are brought to the winery where fermentation occurs slowly. The wine is then aged in French oak barrels for at least 24 months. This extended aging period imparts a complex aroma and a structure that make the wine unmistakable. After a light filtration, the wine is bottled and left to rest for an additional six months before being marketed. This care and dedication in the production process ensure a final product of the highest quality
Tasting the wine
Visually, Ramandolo presents a charming golden color. On the nose, it offers a rich and complex aromatic bouquet, where saffron notes harmoniously intertwine with hints of apricot and delicate nuances of amaretto. On the palate, the wine is fresh and perfectly balanced, with a sugar residue that is never cloying. This combination of elements makes Ramandolo a unique sensory experience, enchanting with its elegance and depth.
Food Pairings
Ramandolo from Cantina Filippon is ideal as a meditation wine, to be sipped in moments of relaxation and reflection.
