The Winemaking
The winemaking process of Cantina Tunella’s Pinot Grigio is meticulous and careful. The Pinot Grigio grapes, grown on marl and sandstone of Eocene origin, locally known as “ponca,” are handpicked during the first week of September. This ensures that each cluster is selected at the ideal ripeness. The whole grapes are then gently pressed to obtain a must that is cold static decanted. Fermentation occurs at a strictly controlled temperature of 16°C and lasts about 30-40 days. Further maturation involves a series of batonnage, contributing to the wine’s complexity and structure. Bottling takes place in March following the harvest.
Tasting the wine of the winery
Tunella’s Pinot Grigio showcases an intense straw yellow color, which deepens with aging. On the nose, it offers a fruity and fragrant bouquet, with notes of warm bread crust and intense aromas of acacia flowers and ripe tropical fruits. On the palate, it confirms its olfactory sensations, presenting itself as elegant and full-bodied, with moderate acidity and delicate yeast notes. It is a wine distinguished by its decisive personality and complexity.
