What you see, what you experience
Appearance: Antique pink with copper reflections. Fine, persistent perlage. Slight haze — the mark of sur lie.
Nose: Wild strawberry, dog rose, hints of bread crust. Citrus freshness follows.
Palate: Sparkling, lively, dry. Good acidity. Savory finish, slightly brioche-like. Alive until the last sip.
Pairings
Serve at 8–10°C. Before opening, slowly invert the bottle to resuspend the lees — or keep it upright for a clearer version. Both choices are correct. That’s the beauty of col fondo.
