The Winemaking
This crémant is 100% Pinot Blanc, a grape variety that thrives in the limestone soils of Alsace. The soil, rich in minerals and well-drained, favors deep root growth, enhancing the concentration of the grapes and ensuring a perfect balance between acidity and freshness. The Sophie Schaal winery adopts organic practices, avoiding the use of synthetic chemicals to preserve the purity of the grapes and the ecosystem’s balance. The harvest is carried out by hand to keep the grapes’ freshness intact. After the first fermentation, the base wine is bottled with yeast and sugar to initiate a second fermentation in the bottle. Subsequently, the wine matures on the lees for at least 24 months, adding complexity and texture.
