The Crémant De Bourgogne Chardonnay from Bailly Lapierre winery is an example of excellence in the winemaking tradition of Burgundy, the birthplace of AOC Crémant de Bourgogne. Since 1972, in an underground quarry offering unique natural conditions, Bailly Lapierre has been producing enchanting sparkling wines. These wines are crafted from noble grapes, hand-harvested and patiently vinified. Sculpted from limestone, the wines are distinguished by their intense mineral freshness, transporting those who taste them into an enchanted world.
The Winemaking
The winemaking process for Crémant de Bourgogne Chardonnay begins with the manual selection of Chardonnay grapes, transported in open 45 kg crates to preserve their integrity. Pressing uses airbag presses, extracting must at a ratio of 100 liters of juice per 150 kg of harvest: 75% from the first pressing and 25% from subsequent ones. Both alcoholic and malolactic fermentations are completed before blending the separately produced wines. Bottling occurs after December 1st, and the wine ages in the bottle for about 16 months. During this time, the bottles rest inverted in the cool, limestone-carved underground cellars.
Tasting the wine of the winery
An elegant and fine Crémant. The wine features bubbles typical of a “Blanc de Blancs.” On the nose, it reveals aromas of ripe white fruit and mineral notes. On the palate, there is a sharp freshness and a winey taste, with well-defined flavors. The structure is rich and well-balanced, with a roundness that accompanies the typical northern Chardonnay minerality.

This sparkling wine pairs perfectly with light appetizers, fish dishes, and shellfish. It is also ideal as an aperitif, thanks to its freshness and finesse. These wines are crafted from noble grapes such as Pinot Noir, Gamay, Chardonnay, and Aligoté, hand-harvested and aged to impart a mineral freshness. The winery is supported by 430 winegrowers from 70 families, emphasizing a sustainable approach to winemaking. The site, rich in history, was initially a stone quarry providing materials for iconic structures like Notre-Dame de Paris and was later converted into mushroom farms before becoming wine cellars. Bailly Lapierre offers a variety of Crémant, including Reserve Brut, Rosé Brut, Chardonnay Brut, and more, and invites visitors to explore its cellars and learn about the winemaking process. The winery’s shop is open year-round, except on some holidays, and is accessible via a steep road.
