The Crémant De Bourgogne Pinot Noir from Bailly Lapierre winery is a distinctive example of “Blanc de Noirs,” a white wine made primarily from black Pinot Noir grapes. The Winemaking
The winemaking process for Crémant De Bourgogne Pinot Noir begins with the manual harvesting of grapes to ensure maximum quality. The grapes are transported in open 45 kg crates to prevent any damage to the bunches. Pressing is done using airbag presses, extracting the must at a ratio of 100 liters of juice per 150 kg of harvest: 75% from the first pressing and 25% from the subsequent ones. Both alcoholic and malolactic fermentations are completed, followed by blending the separately produced wines. Bottling takes place after December 1st, and the wine matures for at least 16 months. During this time, the bottles are inverted on racks in the underground cellars, carved from limestone, where they develop natural effervescence.

The Bailly Lapierre winery, located in the village of Bailly in Burgundy, is the birthplace of AOC Crémant de Bourgogne. Founded in 1972, the winery operates in an underground quarry that offers unique natural conditions for producing sparkling wines. These wines are crafted from noble grapes such as Pinot Noir, Gamay, Chardonnay, and Aligoté, hand-harvested and aged to impart a mineral freshness. The winery is supported by 430 winegrowers from 70 families, emphasizing a sustainable approach to winemaking. The site, rich in history, was initially a stone quarry providing materials for iconic structures like Notre-Dame de Paris and was later converted into mushroom farms before becoming wine cellars. Bailly Lapierre offers a variety of Crémant, including Reserve Brut, Rosé Brut, Chardonnay Brut, and more, and invites visitors to explore its cellars and learn about the winemaking process. The winery’s shop is open year-round, except on some holidays, and is accessible via a steep road.
