The Winemaking
The winemaking process for Alvi’s Drift Sauvignon Blanc begins in the vineyards, where grapes are grown with natural compost and hand-harvested in the cool morning hours to ensure only the healthiest and ripest bunches. In the cellar, the focus is on preserving the fruit-driven expression of the grapes. The premium free-run juice is cold-fermented in stainless steel tanks. After fermentation, the wine rests on the lees for a few months to develop complexity and depth before fining and stabilization.
Tasting the wine
This Sauvignon Blanc captivates with aromas of fig leaf and a hint of green bell pepper. On the palate, it offers an elegant structure with crisp acidity and refreshing notes of greengage and gooseberry, leading to a clean, fresh finish. This exceptional wine is ready to enjoy now but can also be aged for at least three years, promising elegant evolution.

Alvi’s Drift Sauvignon Blanc is extremely versatile in food pairings. It pairs perfectly with a chicken salad or grilled prawns. Additionally, it is ideal with soft goat’s cheese and a fresh baguette, making it an excellent choice for elegant dinners or casual lunches.

Each wine from Alvi’s Drift embarks on a unique journey within the winery. Different winemaking techniques are employed to ferment and mature the varietals in the blends of red wines.
