The sparkling wine Babb’o rosè from the Tenuta Gorghi Tondi winery is a bland of  grapes Frappato, Nerello Mascalese, Nero d’Avola native grapes grown in vineyards owned by the winery. We are near Mazara del Vallo in the westernmost part of Sicily, a stone’s throw from the sea and the sea breezes. The estate is located within a nature reserve protected by the WWF.

The Winemaking

After the harvest, only the selected grapes go to the cellar for winemaking, starting with a soft pressing. The must ferments in steel tanks at a controlled temperature. It is then moved to the autoclave where it remains for thirty to forty days. During this period the wine obtains a light fizziness that makes it lively. After bottling, the wine rests for two more months in the cellar before being released onto the market.

Pinkish, almost onion skin; the aroma is fragrant with pleasant hints of fresh fruit that alternate with floral notes. Very fresh on the palate with a savoury note and a long and persistent finish.

Food Pairings

The Babbìo rosè is perfect as an aperitif and pairs well with fish and white meats. Try it with tempura vegetables.
