The wine Animante LA Dosaggio Zero of the Barone Pizzini winery
Animante LA Dosaggio Zero is an exceptionally elegant Franciacorta produced by the renowned winery Barone Pizzini. This wine stands out for its 78-month aging on lees, a feature that gives it complexity and depth. Made from a blend of Chardonnay (94%), Pinot Nero (3%), and Pinot Bianco (3%), this wine is an authentic reflection of the Franciacorta hills’ terroir. The harvest takes place in the municipalities of Provaglio d’Iseo, Passirano, Corte Franca, and Capriolo, where vineyards are located at altitudes between 200 and 350 meters above sea level
The Winemaking
The winemaking of Animante is a meticulous process that begins with gentle pressing of the grapes. Fermentation takes place in temperature-controlled stainless steel tanks, ensuring precise temperature control to preserve the grapes’ aromatic integrity. After fermentation, the wine matures for 8 months in stainless steel tanks before bottling. The bottle aging on lees lasts 78 months, contributing to the wine’s complexity and structure. Disgorgement is carried out without the addition of sulfites and sugars, maintaining the product’s purity and authenticity.
Tasting the wine of the winery
Animante LA Dosaggio Zero appears in the glass with a bright straw yellow color and a fine, persistent perlage. On the nose, it offers a complex bouquet of aromas ranging from citrus notes to hints of dried fruit and bread crust, resulting from the long aging on lees. On the palate, this Franciacorta stands out for its freshness and vivacity, with a perfect balance between acidity and structure. The flavor persistence is remarkable, with a mineral finish that reflects the character of the morainic and gravelly soil from which it originates.
Food Pairings
Thanks to its versatility, Animante LA Dosaggio Zero lends itself to a wide range of gastronomic pairings. It is perfect with Culatello di Zibello, as it balances the salinity of the cured meat with its freshness. It pairs beautifully with first courses, fish, and white meats, offering a refined complementarity of flavors. An especially interesting combination is with truffle-based dishes, where the wine enhances the earthy and aromatic notes of the truffle. Being an organic wine, it is also a conscious choice for those seeking environmentally friendly and biodiversity-respectful products.
