The sparking Ribolla Gialla from San Lurins winery
The Ribolla Gialla Frizzante from Cantina San Lurins represents a unique and authentic expression of the Friulian territory, born from a passion for organic viticulture and respect for traditions. This wine results from a consistent commitment to conscious innovation, manifested in the choice of a production method that minimizes manipulation in the winery. Planted in 2016, the vineyard is located on the right bank of the Isonzo River, in the municipality of San Lorenzo Isontino, an area characterized by a plateau with red calcareous and clay-pebbly alluvial soils.
The Ribolla Gialla Frizzante stands out for its freshness and liveliness, characteristics that San Lurins has enhanced by keeping cellar operations to a minimum and working without sulfites.
The Winemaking
The winemaking of Ribolla Gialla Frizzante is a process that combines tradition and innovation. The whole grapes, harvested manually in crates to ensure maximum integrity, undergo gentle pressing. Only the free-run juice from the first pressing, about 50% of the juice, is used. This juice is cold-settled for 12-15 hours, followed by alcoholic fermentation at a controlled temperature between 20 and 22°C. Almost at the end of fermentation, when only a few grams of sugar remain, the wine is bottled to complete fermentation in the bottle, creating a natural overpressure. The bottles rest for at least 12 months before being marketed, thus ensuring a superior quality product, expressive and original.

The Ribolla Gialla Frizzante is characterized by a pleasant acidity and harmonious balance, making it perfect for various occasions. The ideal serving temperature is around 10°C, to best enhance its sensory qualities.
