As their first production, this winery has implemented a meticulous and innovative approach to ensure a high-quality product. Prosecco, known for its freshness and liveliness, is presented as a wine that celebrates Friulian tradition, but with a touch of modernity and technical precision.
The Winemaking
The winemaking process of Vie Sedean 80’s Prosecco is carefully managed to preserve the integrity and essence of the grapes. The grapes are loaded whole using a peristaltic pump, ensuring that the berries remain as intact as possible. During pressing, the cycle is set to minimize breakage, avoiding excessive extraction of polyphenols and focusing on recovering the ‘mosto fiore’. This must, considered the most noble, is rich in sugars, acids, and essential aromatic precursors. After a day in contact with the pulp, the must is clarified in the evening. Following alcoholic fermentation, the wine undergoes a series of rackings to remove coarse lees and keep the fine lees suspended. The temperature is gradually lowered to 8°C, maintaining the wine in this condition throughout the winter. In spring, the base wine undergoes secondary fermentation in tanks, is filtered to the desired residual sugar, cold stabilized, and finally bottled with a small addition of sulfites for preservation.
