The Winemaking
The production of Friulano Dolée begins with de-stemming and cold skin maceration at 8°C to enhance varietal aromas. This is followed by static cold clarification and alcoholic fermentation, which occurs at controlled temperatures between 16 and 19°C with selected yeasts, lasting 18 days. Malolactic fermentation is not performed, preserving the wine’s original freshness. The elevage takes place on natural lees for 9 months, followed by an 8-month bottle aging period to ensure a perfect evolution of aromas and flavors.
Tasting the wine of the winery
Friulano Dolée presents a straw-yellow color with golden reflections. On the nose, it offers fine and elegant notes of white fruit, with evident hints of pineapple and vanilla, which precede an intense and full-bodied taste. On the palate, the wine is elegant and refined, with medium persistence that invites the discovery of every nuance.
