The Sauvignon Ronco delle Mele from Cantina Venica & Venica represents an oenological excellence that embodies the spirit of its birthplace. Situated in the heart of the DOC Collio, this wine takes its name from the namesake vineyard still adorned with apple trees planted by the founder Daniele Venica. The winery’s philosophy, focused on valuing the territory and traditions, is perfectly reflected in this award-winning wine. The 2001 vintage, for example, was awarded the Best Italian White Wine at the 2003 Wine Oscars. With a breathtaking view towards the Julian Alps, “Ronco delle Mele” is a true ambassador of Friulian winemaking tradition.

The Winemaking
Sauvignon grapes are harvested and destemmed in September. They then undergo a maceration of about 20 hours at 11/12°C in oxygen-protected containers using systems that recycle fermentation carbon dioxide. This approach reduces the use of antioxidants and preserves the integrity of the grapes. About 20% of the wine matures in large wooden barrels, while the rest remains in steel containers, ensuring aromatic and structural complexity. Bottling occurs during the full moons of April and July.
Tasting the wine of the winery
Sauvignon Ronco delle Mele presents itself with a dazzling yellow-greenish color. On the nose, it offers a complex bouquet of vegetal notes like tomato leaf, green pepper, and grapefruit, culminating in a sense of minerality typical of Collio. On the palate, the wine is warm and intense, with a perfect balance between elegance, aromaticity, freshness, and sapidity. The finish is memorable, with an explosion of vegetal notes that promises a long future in the cellar.

Thanks to its vivacity and aromatic profile, Sauvignon Ronco delle Mele pairs beautifully with shellfish, fresh or slightly aged goat cheeses. It is ideal with shrimp risotto with a hint of orange, leek and wild garlic velouté, or dishes with green asparagus.
