The Winemaking
The Cabernet Franc grapes are grown on sandstone marl soils, known as “Ponka,” at an altitude of 100 meters above sea level. The planting density is about 3500 vines per hectare, with a yield of 60 quintals per hectare, and the training system is Guyot. Harvesting is done manually, with picking into crates. During vinification, the grapes undergo skin maceration with alternating pump-overs and délestages, followed by aging in wooden barrels. The wine’s alcohol content varies between 13% and 14% depending on the vintage, and the recommended serving temperature is between 16° and 18°C.
