The Merlot from Doro Princic Winery

The Winemaking

The winemaking process begins with the manual harvesting of the grapes, carried out when they have reached the perfect maturity. The grapes are destemmed and crushed, followed by a maceration period of about 25 days, during which the must ferments at a controlled temperature. After racking, the wine matures for 24 months in small 20-hectoliter oak barrels, allowing for an aging process that enriches its organoleptic characteristics. Subsequently, the wine is assembled in steel tanks and left to rest in the bottle for an additional 2 months before being marketed.

Tasting the wine of the winery

The Merlot presents itself with an intense ruby red color. On the nose, aromatic notes of red fruits are perceived, accompanied by a slight herbal hint. On the palate, this wine offers a complex and smooth structure, characterized by a perfect balance between freshness and tannins. Over time, Doro Princic’s Merlot further refines, revealing a rich and varied bouquet.

Food Pairings

This wine pairs beautifully with game dishes and grilled meats, but is also ideal with flavorful first courses, roasts, and aged cheeses. Served at a temperature of 16-18°C, Merlot represents an excellent choice for special occasions and convivial dinners, enriching every meal with its elegance and complexity.
