The Winemaking
The Merlot grapes thrive in ideal conditions, on deep red clay soils that ensure excellent water retention. The vineyards, located in Stellenbosch Kloof and Devon Valley, benefit from cool sea breezes, promoting slow and even ripening of the grapes. The varieties come from two distinct blocks, planted in 2000 and 2003, using high-quality clones that provide structure and body to the wine. After manual harvesting, the grapes ferment in stainless steel tanks and small open fermenters, with careful extraction of flavors and tannins. Subsequently, the wine matures in 300-liter French oak barrels for 18 months.
Tasting the wine
The Merlot presents a deep ruby color, illuminated by bright reflections. On the nose, delicate notes of vanilla and violets are perceived, enriched by a range of dark fruits like plums and blackcurrant, with hints of woody spices extending into the finish. On the palate, the wine is soft, rich, and velvety, with well-balanced fruit and mature, silky tannins, promising excellent aging potential.
