The Fleur du Cap Pinotage is an excellence in the South African wine scene. This variety, resulting from a unique blend of Pinot Noir and Cinsault, has become a symbol of the country’s viticulture. The Winemaking
The Pinotage grapes are hand-picked and selected. After destemming, the must is allowed to settle at a temperature of 10°C for 5 days before adding selected yeasts. Fermentation takes place at a controlled temperature of 25ºC to preserve the fruity aromas. Frequent pump-overs help extract color and delicate tannins. The wine matures for 12 months in second and third-fill French and American oak barrels. After bottling, it rests for a few more months in the cellar.
Tasting the wine
The Pinotage presents a deep red color. On the nose, it offers a rich bouquet of ripe fruits, such as plums and a hint of blackcurrant, enriched by spicy notes of oak. On the palate, it is full-bodied, with a predominance of ripe plums and other berries. This wine is well-balanced, with a persistent and pleasantly fresh finish that invites another sip.
Food Pairings
