The Winemaking
The Pinotage grapes are hand-picked and selected. After destemming, the must is allowed to settle at a temperature of 10°C for 5 days before adding selected yeasts. Fermentation takes place at a controlled temperature of 25ºC to preserve the fruity aromas. Frequent pump-overs help extract color and delicate tannins. The wine matures for 12 months in second and third-fill French and American oak barrels. After bottling, it rests for a few more months in the cellar.
