The wine Terrano from the Zidarich winery
The Terrano from Cantina Zidarich is an authentic expression of the Karst region, a rare and fascinating red wine variety typical of this area. Produced in a limited area, its unique character is the result of soil rich in red earth and a microclimate influenced by the Bora, which imparts complexity and variety to the wine.
The Winemaking
The production of Terrano begins with a strictly manual harvest, carried out in the first half of October. The vineyards, located between 260 and 280 meters above sea level, benefit from calcareous soil that favors the growth of the grapes. Winemaking takes place in open vats, where fermentation and maceration on the skins occur without temperature control, using only indigenous yeasts. This artisanal choice enhances the varietal characteristics of the grape. After fermentation, the wine undergoes malolactic fermentation in large Slavonian oak barrels, for a total aging of 24 months, followed by an additional 3 months of bottle aging.
Tasting the wine
Zidarich’s Terrano displays a deep ruby red color, enriched with violet reflections. On the nose, it offers a densely fruity aroma, with hints of blueberry, blackberry, and wild strawberry, intertwining in a complex and enveloping bouquet. On the palate, the wine is distinguished by its intense tannins, offering a robust structure and a persistent finish, expressing the power and rusticity typical of this variety.
Food Pairings
Thanks to its complexity, Terrano lends itself to various gastronomic pairings. It is ideal with red meat dishes, roasts, game, and aged cheeses. It also pairs well with typical Karst cuisine, such as jota or frico, thus enhancing the richness of the region. A wine that never ceases to surprise and gratify, capable of conquering even the most discerning palates.
