The wine Aska of the Castello Banfi winery
The Aska wine represents the expression of the adventure undertaken by the Castello Banfi winery in the renowned territory of Bolgheri. This area, known for producing prestigious wines, experienced a complex vintage in 2022 due to a prolonged drought, which was only alleviated by providential summer rains. Aska is a wine that encapsulates the essence of this terroir, showcasing the characteristics of the Cabernet Sauvignon and Cabernet Franc varieties.
Aska represents a sensory journey into the heart of Bolgheri, combining tradition and innovation to offer an unforgettable wine experience.
The Winemaking
The winemaking of Aska involves careful fermentation in stainless steel tanks, maintaining a controlled temperature between 25 and 28°C. During this phase, pump-overs and délestage are carried out to promote the extraction of aromatic compounds and tannins. Subsequently, the wine ages in French oak barriques of 225 liters for about 12 months, imparting structure and complexity to the final product.
Tasting the wine of the winery
Aska wine presents a deep, intense red color. On the nose, it offers a complex bouquet with sweet notes of jam, highlighted by spicy hints of pepper and tobacco. On the palate, the wine is powerful and concentrated, with a firm texture and a persistent finish that promises great aging potential. Despite the climatic conditions of the vintage, the wine maintains a freshness and elegance typical of Bolgheri wines, with well-balanced acidity.
Food Pairings
Thanks to its robust structure and characteristic elegance, Aska pairs perfectly with game dishes, such as roasted venison or pheasant. It is also ideal with selections of aged cheeses and high-quality cured meats, which enhance its aromatic complexity. To best appreciate its qualities, it is recommended to serve the wine at a temperature between 16 and 18°C.
