The Ribolla Gialla Brut sparkling wine from the Monviert winery
The Ribolla Gialla Brut sparkling wine from the Monviert winery is a true expression of Friulian terroir. This wine is made exclusively from Ribolla Gialla grapes, an indigenous varietal with deep roots in the region’s winemaking tradition. The vineyards are located in a privileged position, between the gentle hills and fertile plains near Cividale del Friuli, an area renowned for its high-quality wine production. This sparkling wine is characterized by its unique freshness and delicacy, making it perfect for any occasion, from casual aperitifs to more formal events.
The Winemaking
After the harvest, the selected grapes are taken to the cellar for winemaking, which begins with a soft pressing to preserve the integrity of the skins. Before fermentation, the must obtained is coldly decanted. Fermentation occurs in steel tanks at a controlled temperature, which varies between 18° and 20°C. The wine is moved to an autoclave for secondary fermentation, resting on the yeasts for at least six months. Bottling follows, and a few more months rest in the cellar before being placed on the market.
Tasting the wine of the winery
Straw yellow with light greenish reflections and a fine and persistent perlage. The aroma is fragrant with pleasant floral scents that alternate with fruity notes on a delicate background of yeasts. This Ribolla from the Monviert winery is fresh on the palate slightly aromatic, with a pleasant acid note and a long finish.
Food Pairings
Excellent as an aperitif, it goes well with fish, even raw. Try it with tuna tartare.
