The Winemaking
The winemaking of Merlot Maurus begins with de-stemming and a long 28-day maceration, combined with punching down and delestage, to best extract aromas and tannins. Fermentation takes place in stainless steel tanks at controlled temperatures between 18 and 30 °C, using selected yeasts. Malolactic fermentation is completed to soften the wine, which then matures for 18 months in barriques. Subsequently, the wine rests for 8 months in stainless steel tanks until achieving natural clarification, before being bottled and aged in the bottle for 14 months.

On the nose, it offers a fine and enveloping aroma, with hints of red berry fruit, prominently featuring ripe plum, accompanied by notes of dark chocolate.
