The Pignolo from Ronchi di Manzano Winery
The Pignolo from Cantina Ronchi di Manzano is a red wine of great character, an authentic expression of the Friuli Colli Orientali region. Made exclusively from Pignolo grapes, it embodies the tradition and passion for viticulture, offering a unique sensory experience. With an alcohol content of 14.50%, this wine is a perfect example of the power and elegance that the Pignolo grape variety can achieve.
The grapes used for the Pignolo come from the highest hill of Rosazzo, with Guyot-trained vines on a marl and sandstone soil of Eocene origin, known as “ponca.”
The Winemaking
The harvest is carried out with careful selection of the grapes, followed by destemming and fermentation at controlled temperatures. The maceration on the skins lasts about 12 days, allowing the wine to acquire color and structure. After fermentation, the wine is aged in barriques for about twelve months, followed by further aging in the bottle. The result is a wine that is marketed three years after vinification, in compliance with the regulations that guarantee its quality.
Tasting the wine of the winery
Visually, the Pignolo presents a cheerful and brilliant ruby color. On the nose, it offers an intense and gentle aroma, characterized by fruity notes of black cherry and blackberry, accompanied by a spicy hint. On the palate, it reveals a warm, smooth, and enveloping taste. It is a dry wine, well-structured, and very robust, with a slight tannicity that enhances its complexity.
Food Pairings
The Pignolo from Cantina Ronchi di Manzano pairs perfectly with substantial meats, such as pork roasts, lamb, and game. Its structure and complexity make it an ideal companion for rich and flavorful dishes, enhancing the flavors of traditional Friulian cuisine and beyond.
