The Winemaking
The winemaking process for Schioppettino is designed to enhance the natural characteristics of the grapes and terroir. Fermentation occurs spontaneously thanks to indigenous yeasts, a method that allows for the preservation of varietal aromas and the peculiarities of the territory. During the 12 days of maceration, the skins remain in contact with the must, extracting color, tannins, and aromas. Malolactic fermentation, carried out in oak tonneaux, contributes to giving the wine greater softness and complexity. Aging for 10 months in barriques further softens the wine without altering its aromatic bouquet, while adding structure and depth.
Tasting the Morus Nigra
The Schioppettino presents itself in the glass with a bright ruby red color, enriched by violet reflections. On the nose, it offers a complex bouquet of fruity and spicy notes, featuring aromas of currants and raspberries accompanied by hints of black pepper and sweet spices. On the palate, the wine is juicy and fresh, characterized by an intense sip with spicy nuances. With an alcohol content of 12.5% vol., it is a balanced wine suitable for various occasions.
