The Pinot Noir from Domaine Sophie Schaal Winery
The Winemaking
The winemaking process of Sophie Schaal’s Pinot Noir is meticulous, beginning with the manual harvesting of the grapes, followed by careful sorting to ensure only the best are used. Fermentation occurs naturally, without the addition of external agents, to preserve the purity of the flavors. The wine matures for 10 months in French oak barrels, a step that adds complexity and structure. The decision not to filter the wine is also significant, maintaining its aromatic finesse. This approach results in a wine that best expresses its marl-limestone terroir, characterized by excellent drainage and a richness of minerals that contribute to the balance between freshness and acidity.
Tasting the wine
Visually, this Pinot Noir presents a deep ruby red color, enriched with garnet reflections that highlight its richness. On the nose, the wine offers a complex and layered bouquet: notes of ripe black fruits such as blackberry, blackcurrant, and cherry are perceived, accompanied by hints of vanilla, subtle spices, and a slight earthy touch. On the palate, the wine is smooth and well-balanced, with a fruitiness reminiscent of wild berries, supported by fine, silky tannins that provide structure and elegance. The finish is long and harmonious, with a spiced note that adds depth.
Food Pairings
Thanks to its vibrant fruitiness and refined tannins, Sophie Schaal’s Pinot Noir lends itself to versatile pairings. It pairs magnificently with red meats and game, enhancing their rich flavors with its elegant structure. Additionally, it is an excellent companion for white meats and poultry, while its delicate spiced notes harmonize perfectly with Middle Eastern and Moroccan cuisine, such as hummus, tabbouleh, lamb tagine, and couscous. This wine not only accompanies dishes but transforms them into a complete culinary experience.
