The Winemaking
The Sauvignon grapes, handpicked during the first week of September at the right degree of ripeness, undergo gentle pressing. The resulting must is cold-settled. Fermentation occurs slowly at a controlled temperature (16°C) for a period of 30-40 days. Subsequently, the wine matures through a batonnage process, enriching the wine’s aromatic profile and structure. Bottling takes place in March following the harvest.
Tasting the wine of the winery
The Sauvignon from Cantina Tunella presents a lively and bright straw-yellow color, enriched with greenish reflections. On the nose, it offers an intense and persistent bouquet, with vegetal notes of sage and tomato leaf, accompanied by fruity aromas of melon and yellow bell pepper. On the palate, the wine is fresh and dry, with a perfect balance between acidity and aromatics, closing with a long aromatic persistence that invites another sip.
