The Winemaking

The harvest is strictly manual, followed by gentle pressing. After low-temperature fermentation in stainless steel tanks, the wine undergoes malolactic fermentation, preparing it for bottle fermentation. Finally, the wine rests on the lees for about 24 months before disgorgement, imparting unique complexity and finesse.
