Borealis Cuvée Brut Sparkling Wine from the Krone winery
The Borealis Cuvée Brut sparkling wine is a standout among South African classic methods, born from the expertise of Krone Winery. The Winemaking
The 2023 vintage, described as “sculptural” by winemaker Stephan de Beer, featured a night harvest starting on January 4th, the earliest ever recorded. The grapes, composed of 79% Chardonnay and 21% Pinot Noir, are harvested at night to preserve their freshness. Only the free-run juice, about 500 liters per ton of grapes, is used in production. After fermentation, the wine is bottled with yeast and matures for about 12 months in underground cellars, developing complexity and biscuity notes.
Tasting the wine
Borealis presents with an intense straw color and golden highlights, accompanied by a fine and persistent perlage. On the nose, it offers aromas of pineapple, fresh yellow apple, lime, and a delicate pastry note. On the palate, it stands out for its fullness and freshness, with creamy hints of caramel and bread crust, enriched by surprising finesse and persistence. The structure reveals vibrant layers of green and red apples, white peaches, and kiwi, with a final touch of lemon.

Borealis pairs beautifully with a variety of dishes. It is perfect as an aperitif with hors d’oeuvres, sashimi, and raw seafood. In 2024, it was awarded 4 stars by the Platter’s Wine Guide, one of the most authoritative guides in the South African wine world. Additionally, it received the Silver Outstanding at the Veritas Wine Awards 2024, highlighting its refinement and ability to stand out among the best sparkling wines.
