The winemaking
The harvest is a meticulous ritual, carried out entirely by hand, selecting only the finest clusters for vinification. After a gentle pressing, the alcoholic fermentation takes place in stainless steel at low temperatures, preserving the freshness of the aromas. The wine rests on the lees until the spring following the harvest, when the second fermentation begins in the bottle with the addition of selected yeasts. The aging on the lees continues for at least 30 months, developing complexity and depth. Finally, disgorgement occurs without the addition of liqueur d’expédition, maintaining the wine’s purity.
