It is recommended to serve this wine at a temperature of 18/20°C. The Winemaking
The Cabernet Franc grapes were harvested and destemmed in the first decade of October. In the winery, the grapes were macerated for about 10 days at a controlled temperature not exceeding 24°C. This process allows optimal extraction of aromas and tannins while maintaining a vibrant freshness. The wine is then aged in steel until bottling, which occurs in February following the harvest, to preserve the purity of its aromas and flavors
Tasting the wine of the winery
The Cabernet Franc presents itself with an intense ruby red color. On the nose, the bouquet is predominantly fruity, with notes of small red fruits such as blueberries, currants, and raspberries. These are accompanied by spicy nuances of black pepper and licorice, along with herbal notes of arugula, bell pepper, and freshly cut grass. On the palate, the wine is full-bodied and rich, with an enveloping tannic structure and a lively freshness imparted by the herbal component. With aging, it evolves into balsamic notes and spicy hints, maintaining a persistence consistent with the bouquet perceived.

Thanks to its robust body and medium tannins, the Cabernet Franc pairs perfectly with roasts, game, wild game, and hearty meat dishes. It is also ideal with hard and aged cheeses, enhancing the flavors of the dishes with which it is served.
