THE PRODUCT
The chestnut lime honey of the Facco Sonica Apiculture is produced between the end of June and the first half of July. It uses the blooms of wild mountain chestnut trees. It is a liquid honey of extraordinary versatility and it is the richest in mineral salts.
Amber, sometimes deep and tending to reddish; aromatic and pungent, penetrating with a vegetable flavor. On the palate it has the typical “bitter” and tannic flavor.
THE COMPANY
Facco Sonica Apiculture was founded in 1950 when the grandfather Siro began to “raise” bees as he did with all the other animals on the farm. At the time, the beekeeping technique was very rudimentary. In the summer months, the grandfather took some natural combs wisely built by bees from the wooden crates in which they were staying. In the following years it was uncle Luigi (Gigi) who transformed grandfather Siro’s apiary into a modern business. It is thanks to him that Sonia has managed to steal the techniques and the great passion for these small but so intelligent animals.
In year 2000 Sonia took over the reins of the business and, as Sonia says, “the story continues today thanks to the teachings i learned from the wise uncle Gigi” …
